I have same issue, with Win 7 server and Mac client.

Mouse is also slow on Mac when I move across after executing a command on Windows (eg - copy file on Windows, move to Mac, mouse is very slow and jerky) - wondering if Mac response may be affected by what's happening on Windows machine at the time?

Please try using only ethernet and disable any 3rd party firewalls to see if that fixes it.
